The rumen of a cow was on the menu in the local Xwama restaurant in Windhoek, Namibia (2019). There was quite a bit of sand in it so it was pretty crunchy from time to time. This was logical because the grass that a cow eats naturally also contains grains of sand. The structure of the tripe is very coarse. That of course makes it difficult to wash the sand out.
